			<content:encoded><![CDATA[<p>One of my all-time favorite quotes. My wonderful daughter told me that one day when I had picked her up from school. We were discussing what I had planned for dinner. I believe the exact quote is: <em></em></p>
<blockquote><p><em>“Yummy!! I love your burritos more than McDonld’s!”</em></p></blockquote>
<p>Yup. I’m all puffed up over here.</p>
<p>I would love to tell you I am completely health-conscious and my burritos follow that mindset, but… I’m not and they don’t. I am competing with McDonald’s after all and that most certainly involves sour cream!</p>
<p>So, my recipe?  Well, I’m all about quick and easy so…</p>
<p><strong>1 LB ground beef<br />
2 cans refried beans (I use Old El Paso, traditional)<br />
1 jar your favorite salsa (I use Pace-Mild)<br />
1 package 4-cheese blend (Mexican)<br />
1 envelope Taco Seasoning (I use Old El Paso)<br />
Tortillas</strong></p>
<p><strong>Don’t forget all your favorite toppings.  For example:<br />
Lettuce (I use the pre-packaged shredded lettuce)<br />
Tomatoes (I usually dice these while the beef is browning)<br />
Black olives (pre-sliced, of course)<br />
Shredded cheese (I use the remaining 4-cheese blend)<br />
Sour cream</strong></p>
<p><strong>Put both cans of refried beans in a pot, add a portion of the cheese and salsa. (You decide how much you would like to use. I add a good handful of the cheese and about 1/3 of the jar of Salsa.) Heat on Medium.</strong></p>
<p><strong>While that cooks, brown your ground beef. Drain the fat, add the envelope of taco seasoning and cook as directed. Once that is complete, I add the beef to the beans or vice versa, depending on which pot is bigger. Mix well.</strong></p>
<p><strong>Heat Tortillas according to package</strong></p>
<p><strong>That&#8217;s it!</strong></p>
<p>I have never timed how long it takes to do this but I know it all comes together pretty quickly. It is most definitely done within 20 minutes of starting, I would say.</p>
<p>So, healthy? Well, it could be if you substitute fat-free refried beans, fat-free sour cream, low-fat cheese and ground turkey. Yummy? Definitely. My daughter will vouch for that.</p>

			<content:encoded><![CDATA[<p>Someone gave this recipe to my little brother so I do not know exactly from where the original came. It is soooooo easy and soooooo yummy! (Seriously, it takes maybe ten minutes max to make.)</p>
<p><strong>2 small packs of French Vanilla Jell-O Pudding Mix<br />
1 box graham crackers<br />
1 container chocolate frosting<br />
12 oz. Cool Whip<br />
3 cups milk<br />
</strong><br />
Mix the pudding powder with the milk using a whisk. Mix that with 9 oz of the Cool Whip. Put a layer of graham crackers at the bottom of a 9×13 pan. Layer half of the pudding on top of the graham crackers. Layer graham crackers on top of the pudding. Add last half of pudding on top of the graham crackers. Add one last layer of graham crackers on top.</p>
<p>Mix the remaining 3-oz of Cool Whip with the chocolate frosting and spread on top of final layer of graham crackers. Chill and Serve. (I like to let it sit overnight to let the graham crackers soften.)</p>
